    Hi. I have made sd pizza with 90:10 mix of series c 8615:8318 wth 70% hydration.

    I just recd twf pizza flour. Wondering how much hydration should i start with using this flour?

    sorry for the delay. Missed this one.
    60-65% would be a good starting point.
