Into your Food Processor or wet grinder jar, add
    250 gms shelled prawns- (frozen)
    50 gms corn kernels (frozen)
    2 spring onions, chopped
    2 cloves garlic
    1 stalk celery
    1 green chilli
    1 tbsp oyster sauce
    1/2 tsp pepper powder
    3 tbsp sourdough discard
    1 egg
PULSE a few times. You want a few chunky bits of prawn here.Check for salt- as the oyster sauce is salty.Using wet hands, shape the mixture into balls.Roll in Panko or normal breadcrumbs, and deep fry.
Serve with a sweet chilly sauce, drizzled with sesame oil

Note: Using frozen prawns and corn helps in keeping the mixture firm.In case prawns are fresh, pulse lesser.
Even if the mixture does feel ” loose”, using wet palms helps to handle it.
( hey sourdough bakers, wet palms can handle even the stickiest of doughs, right?😅)
